Recipe Name: Tilapia with Sweet Balsamic Roasted Peppers & Asparagus
- Red Pepper
- 4 oz Chef Tim's Sweet Balsamic Vinaigrette
- Kosher salt
Slice red pepper into long thin strips. Cut off tough ends of asparagus, or if you prefer, shave the ends with a vegetable peeler. Toss them in Chef Tim's Sweet Balsamic Vinaigrette so that all vegetables are coated. Spread in a shallow pan; add a pinch of kosher salt. Add another drizzle of dressing when serving with the fish.
- Tilapia fillets
- Panko Bread Crumbs
- Chef Tim's Savory Steak & All Purpose Seasoning
- Lemon Pepper Seasoning
Season Tilapia with kosher salt and brushed on one side with mayo. In a shallow dish, combine Panko bread crumbs with Chef Tim’s Savory Steak Seasoning; 2tsp dill and 1TBS lemon pepper seasoning. Press the coated side of the fish in the mixture and place in a prepared baking pan, coated side up. Melt 1TBS of butter and drizzle over top the bread crumbs. Bake fish and roast vegetables at 425 for 20-25 minutes or until top is golden and fish flakes easily with a fork and veggies are crisp tender. Sometime I have the red pepper separated to place them in the oven as it is pre heating if I want them more tender, and then combine them with the asparagus when I am ready to cook the rest.
