Chef Tim's Roasted Butternut Squash with Caramelized Onions

 

A delicious fall vegetable to be served with rice pilaf.   

Ingredients:

  • 1 medium butternut squash(peeled, deseeded and cubed cut into 3/4’ x 1’ cubes(as best as possible)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium/large red onion(peeled and cut into 1’ cubes) (keep in layers of 3 or so)
  • 6 oz Chef Tim's Sweet Balsamic Vinaigrette
  • 1 tsp salt

Directions:

Toss all ingredients in bowl, coat thoroughly and pour all unto a sheet pan

Bake 45 minutes at 425 degrees (near top of oven).  Toss one time during cooking

Pull out of oven and carefully drain olive oil from sheet tray for disposal.

Pour remaining vegetables with caramelized vinaigrette (lightly adhering to sheet tray) in bowl and serve.  I prefer to serve with rice pilaf.
