Customer Recipe:  Grilled Cheesy Eggplant

Recipe Name: Fresh Fish with Sweet Balsamic Vinaigrette

Chef Tim's Sweet Balsamic Vinaigrette
Asiago or Manchego cheese


Slice eggplant to desired thickness and place in an airtight container. Cover with Chef Tim's Sweet Balsamic Vinaigrette Dressing and marinate, unrefrigerated for at least one hour (the longer the better).

Place the sliced eggplant on your grill over medium heat (or in a 350 degree oven) and grill until golden brown.

Top with grated Asiago or Manchego cheese. Continue to grill or bake until cheese is melted.
